A healthy pancake recipe the very lovely Natasha Minter…

Ingredients

(mixture should create 4 small pancakes)

1 shot almond milk
100g blueberries
2 tablespoons coconut flour (you can also use other flour but coconut is healthiest!)
1 scoop plant based protein (NOT WHEY!)
2 eggs
1 banana
Dairy free butter for pan
Optional: honey/maple syrup, strawberries, lemon

Method

 

image_31. Blend all ingredients (leaving 1/3 of blueberries for topping).

image_42. Put a knob of butter in a hot pan.

image_63. Pour the mixture into the pan (this recipe works better making smaller
pancakes rather than the wide ones that fill the circumference of the pan).

image_74. Let it cook one side and form a pancake then leave it for a few minutes.

6. Flip it over to cook the other side
