Superfood Summer Salad

(serves 1)

Ingredients

¼ of a head of broccoli
½ cup quinoa
¼ red pepper
¼ yellow pepper
¼ red onion
Handful of spinach
½ garlic clove
Vegetable oil
Hummus (optional but delicious if so…)
Dressing ingredients:
½ tsp Dijon mustard (or any other mustard would work too)
Sprinkle of garlic powder
¼ lime squeezed
2 tbsp olive oil
Sprinkle of salt and pepper

Method

1. Steam the quinoa (you can boil it too) for 20 minutes, using the same amount of water as
(The pack of quinoa will probably have instructions on how to cook it so I suggest reading
this instead of following my instructions as we probably use a different quinoa. The one I
use is from Ocado.
2. Add your garlic to a non-stick frying pan with some vegetable oil, then add the broccoli,
onion (finely sliced), red and yellow peppers (cut into small bite size chunks), and cook
for 10 minutes, then gradually add the spinach so it wilts a little.
3. Add all dressing ingredients to a small mug and whisk together with a fork (the mustard
will be quite thick so give it some elbow grease).
4. Mix all ingredients together in a bowl and give it a good mix so the dressing spreads
evenly. Hummus again is delicious with this dish and in my eyes, is a necessity.
