The final of 3 Summer salad recipes Natasha Minter has kindly shared with us…

Moroccan Inspired Summer Salad

(serves 1)

Ingredients

For the salad:
200g chickpeas (drained and rinsed)
½ aubergine
6 cherry tomatoes (roughly)
Handful of spinach
¼ red onion (thinly chopped)
(If you like coriander it’s a great additional & some would say a necessity. I’m not a huge fan
so I have it without and it still tastes delicious)

For the dressing:
Sprinkle of paprika and ground cumin
½ tsp agave nectar (you can use honey too)
¼ lemon squeezed juice
1 tbsp olive oil

Method

1. Thickly slice the aubergines, sprinkle them with salt, pepper and vegetable oil, and
then grill for 10-15 minutes, swapping sides half way through when they turn brown.
2. Cut the aubergine slices into quarters when grilled
3. Add all ingredients to a bowl
4. Make the dressing by putting all ingredients into a jar or a container that you can
shake all ingredients together in
5. Mix the dressing through the salad and enjoy…
6. …you get the picture. Add hummus if your hummus mad like me!
