Here we have another delicious model recipe from Estelle…
When I say caramelized I mean it... The beetroot turns into hard sweet balsamicly, caramelised amazing-ness!
This recipe is so easy and tasty and you can really throw what ever you like into the salad. It's a great summer salad with the freshness of the pear and the additional kick of some lemon juice/zest.
4 fresh beetroots
3 tbsp balsamic vinegar
2 tbsp olive oil
2 tbsp honey
2 tbsp coconut sugar
1 Bosc pear ½ cup walnuts
3 cups of salad greens ½ cup feta (if you are vegan just skip out on the feta and honey)
1. Peel and cut the beetroots into bite size wedges 2. Pre-heat the oven to 180 degrees and quickly roast the walnuts 3. Mix the vinegar, oil, honey and coconut sugar in a bowl and then coat the beetroot generously with it. 4. Spread the pieces of beetroot over a lined baking tray and leave in the oven for 20-30 minutes 5. Just keep an eye on them you want it to turn into a dark balsamic colour with bits caramelising and bubbling away around it, not black and charcoal
6. Once the beetroot is ready and cooled add it to the salad greens along with the chopped walnuts,
feta and slices of pear. Then enjoy!
